Spinach and Hard-boiled egg Quiché with Oat/Spelt crust.


1 c of cooked spinach

1/2 mushrooms, chopped

2 hard-boiled eggs

1/2 an onion

1/8 c of swiss cheese

1/2 cup of heavy cream

1 egg


1/2 c oat flour

1/2 c spelt flour

125 g of butter, Crisco or veggie spread

Pinch of salt

1 egg yolk

Gettin’ your grub on

Preheat the oven to 350 degrees and grease your baking dish. Put the flour and butter in a bowl and rub in with your fingertips until the mixture resembles breadcrumbs. Add the egg yolk and 2 tablespoons water and mix together with a flat-bladed knife to form a rough dough. Cover with plastic wrap and refrigerate for 30 minutes. Roll the pastry out between 2 sheets of baking paper, until large enough to cover the base and side of the prepared dish.  Ease the pastry into the dish and trim any excess pastry from the edges (note: don’t overdo it. When you bake it, there will be some shrinkage.) Cover with baking paper, and spread with a layer of baking beans. Bake for 7 minutes, uncover and bake for 8 minutes.

Stir fry the spinach and onion and set to the side. Boil eggs ahead of time and let them cool. Beat the egg in the cream and add favorite seasoning to the cream. Layer the egg, spinach, onion, and mushrooms until you reach the top (or run out of stuff). Cover with Swiss cheese and pour the cream/egg mixture over. Bake in a 350 degree oven for 30 to 35 minutes.
